Coconut chews

Made these yesterday and they were super yummy. For all you coconut addicts like me out there they are pretty easy to make.
3/4 c. powdered sugar
3/4 c. shortening (half margarine or butter softened)
1 1/2 c. flour ( all purpose or whole wheat)

2 eggs
1 c. packed brown sugar
2 TBS flour
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
1/2 c. chopped walnuts
1/2 c. flaked coconut

heat oven to 350 degrees. Mix powdered sugar and shortening. Stir in 1 1/2 c. flour. Press into un-greased 13 x 9 x2 pan. Bake until golden brown, about 12-15 minutes.
Mix remaining ingredients.Spread over baked layer and bake for 20 minutes. Cool. Frost with Orange frosting (see below) if desired. Cut into bars about 3 x 1 inches.

Orange frosting (more like a glaze)
Mix 1 1/2 c.powdered sugar, 2 TBS margarine melted and 3 TBS orange juice.

  1. Yum Yum. I love coconut! can't wait to try these!

  2. Sounds yummy going to try them when I get some more coconut!

  3. These are sooooo good!! Cait even liked them and she "hates" coconut! I think she likes coconut just doesn't want to admit it!
